Mexican Beef and Rice

<p>A very easy dish to make when one is needed for those &#8220;Pot Luck&#8221; meals.</p>

Serves: Eight


Ingredients
1 Lb. Ground beef, Grass fed
1 1/2 Cup Grated Cheese
1 Pk. 1 Oz. Taco mix seasoning
1 Cup Rice, Long grain, Uncooked
1 Cup Mixed Vegetables (Frozen)
1 Can (14.5 Oz.) Tomatoes, diced, undrained
1 Cup Salsa
1 Cup Broth, Chicken, Reduced sodium

Step by Step Instructions
  1. Brown Meat and drain. Add 1 cup cheese and ALL other ingredients to meat.
  2. Spoon mixture into 13 X 9 baking dish sprayed with cooking spray.
  3. Cover with foil and cook for 40 - 50 minutes at 375 degrees, or until rice is tender.
  4. Top with cheese and bake an additional 5 minutes uncovered.
