Farmer's Market Saute'

Vegetarian!

Ingredients
2 Teaspoons Olive oil
1 pound Quartered small red potatoes
1/2 Medium sized onion, thinly sliced
1 Clove of garlic, minced
1 Zucchini, coarsely chopped
1/2 pound Green beans cut into 1 inch lengths
1/2 cup Vegetable broth
1/2 cup Fresh corn kernels
2 Ripe tomatoes, coarsely chopped
1 to 2 tablespoons Fresh herbs such as Thyme
And/or basil
And/or rosemary
1/2 cup Cheese (optional)

Step by Step Instructions
  1. Heat oil in a skillet over medium high heat. Next add potatoes and cook, stirring occasionally, until they are lightly browned (about 5 minutes).
  2. Add onion, garlic, zucchini, and green beans and cook, stirring often, for 2 minutes, then add broth and cook for 2 minutes more.
  3. Add corn, tomatoes, and herbs. Cover and cook over medium heat until potatoes are tender (about 3 minutes). Season to taste and sprinkle cheese before serving if desired.
