Chef John's Italian Sausage Chili

Ingredients
1 tablespoon Olive oil
1 1/4 pounds Hot Italian sausage (casings removed)
1 1/4 pounds Mild Italian sausage (casings removed)
1 Onion (chopped)
Salt to taste
2 tablespoons Ancho chile powder
1 teaspoon Paprika
1 teaspoon Ground cumin
1 teaspoon Black pepper
1/2 teaspoon Chipotle chili powder
1/2 teaspoon Dried oregano (homemade or store bought)
2 1/2 cups Water
1 cup Tomato puree (homemade or store bought)
15 ounces Cannellini beans
2 Bell peppers (diced)
Onion slices for topping (optional)
Sour cream for topping (optional)
Fresh basil for topping (optional

Step by Step Instructions
  1. Heat your oil in a large pot over medium high heat. Stir together both kinds of sausage, onion, and salt. Cook for about 10 minutes, breaking up the sausage while cooking.
  2. Add the ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture and let it cook for about 2 minutes.
  3. Pour the water and tomato puree into the sausage mixture. Bring it to a simmer, then lower the heat to the medium-low range. Let cook for 45 minutes, adding more water if necessary.
  4. Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer the chili for 30 minutes more.
  5. Top with onion slices, sour cream, and/or fresh basil if desired.
