Fried Pecan Okra

Vegetarian!

Ingredients
1 cup Pecans
1 1/2 cups All-purpose baking mix
1 teaspoon Salt
1/2 teaspoon Pepper
2.5 cups Okra (thawed if frozen)
Peanut oil

Step by Step Instructions
  1. Put the pecans into a shallow pan and spread them into an even layer. Bake them at 350 degrees for 10 minutes.
  2. Process the pecans, baking mix, salt, and pepper in a food processor.
  3. Put the pecan mixture into a bowl, add the okra, and gently toss the okra to coat them.
  4. Pour 2 inches of oil into a Dutch oven and heat it to 350 degrees and fry the okra in batches (turn it over after 5 to 6 minutes)
