Crispy fried onions

<p>Crispy fried onions are a nice condiment or ingredient in a lot of dishes. Especially Asian recipes. Once prepared they can be stored in the refrigerator for several weeks in an airtight container.</p>

Serves: About 1 cup
Vegetarian!

Ingredients
Onions (small) 1lb Slice the onions thinly. Should be about 2 cups.
cooking oil 1 cup vegetable or peanut oil
turmeric 1/8 teaspoon ground
sugar 1/2 teaspoon white or turbinado

Step by Step Instructions
  1. Heat the oil in a skillet on low to medium heat. Add the onions and turmeric. Fry slowly stirring occasionally for 10 to 12 minutes, until the onions begin to turn color.
  2. Add sugar, stir well, and fry for about 2 more minutes. The onions should be a light golden brown. Remove them and drain on paper towels.
