Betsy's Hamburger Pie

<p>This is an old standby from the days when I had three kids under my feet in the kitchen. It was delicious with local beef and a homemade crust of regional wheat. I love it! Comfort food with a conscience.</p>

Serves: 6 (including 4 teenagers). Can be halved.


Ingredients
2 lbs ground beef
2 eggs
1 container of cottage cheese
1 sliced onion
1-2 clove garlic
1 in-season vegetables
1 mushrooms (optional)
1 tsp Thyme

Step by Step Instructions
  1. Pre-heat oven to 350 degrees.
  2. Brown the beef and drain the fat. Stir in eggs and entire carton of cottage cheese into the meat. Add salt and pepper to taste and some thyme.
  3. Add vegetables
  4. Make your best double pie crust. Take the whole batch and press it into the bottom and sides of a large (mine is a very large) cast iron skillet.
  5. Bake until crust is brown and the filling is set, about 40 minutes. My crust is made with Robin Fazio's wheat which is pretty brown, so it's tempting to take it out before the filling was set, because the crust gets so dark.
