Foil Grilled Red Potatoes

Vegan!

Ingredients
1 pound Red potatoes (quartered)
2 or 3 tablespoons Olive oil
1 small Onion (finely diced)
1 teaspoon Onion powder
1 teaspoon Garlic powder
1 teaspoon Dried basil
1 teaspoon Dried thyme

Step by Step Instructions
  1. Heat the grill to 400 degrees, wash and quarter red potatoes. Dice the onion.
  2. Put the potatoes & diced onion into a large plastic bag and drizzle them with olive oil and the spices. Seal the bag and shake until the vegetables are well coated in the oil.
  3. Remove the vegetables from the bag and place them onto a large piece of heavy-duty aluminum foil. Put down another piece of foil, then fold them together to form a pack. Poke a few holes in the pack with a fork.
  4. Place the foil pack onto the heated grill over direct heat. Cover the grill and let cook for 20 minutes.
